Ingredients

  • 2 cups elbow macaroni
  • 1/2 cup mayonnaise
  • 1/4 cup milk
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated carrots
  • 1/4 cup chopped onion
  • 1/4 cup celery optional

Instructions

Cook the Pasta

  • Boil water in a large pot. Add macaroni and cook until soft. Do not overcook. Drain and let it cool slightly.

Rinse and Cool

  • Rinse cooked macaroni with cold water. This stops cooking and keeps pasta firm. Let it drain completely before mixing.

Prepare the Dressing

  • In a bowl, mix mayonnaise, milk, vinegar, sugar, salt, and pepper. Stir well until smooth and creamy.

Combine Pasta and Dressing

  • Add cooled macaroni to the bowl. Mix gently until pasta is fully coated with creamy dressing.

Add Vegetables

  • Add grated carrots, onion, and celery. Mix everything well. This gives crunch and fresh flavor to the salad.

Chill the Salad

  • Cover the bowl and place it in the fridge. Chill for at least 1 hour. This helps flavors blend well.

Serve Cold

  • Remove from fridge and stir lightly. Serve cold as a side dish with BBQ meals or grilled food.

Notes

  • Use full-fat mayo for creamier taste
  • Do not overcook macaroni
  • Chill before serving for best flavor
  • Add boiled egg for richness
  • Add pineapple for Hawaiian twist
  • Adjust vinegar for tangy taste
