Ingredients
  

  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 1 clove garlic minced
  • 1 teaspoon brown sugar
  • 1 tablespoon water
  • 1/2 teaspoon chili flakes optional

Prepare Ingredients

  • Chop garlic and grate fresh ginger. Measure all ingredients carefully. This helps keep flavor balanced and smooth.

Mix Base Sauce

  • In a bowl, add soy sauce, mirin, rice vinegar and honey. Whisk until honey fully dissolves.

Add Aromatics

  • Add garlic, ginger, and sesame oil into the mixture. Stir well so flavors blend evenly.

Add Sweetness

  • Add brown sugar to deepen flavor. Mix until fully dissolved. This gives a rich caramel note.

Heat the Sauce

  • Pour mixture into a saucepan. Heat on low flame for 3–5 minutes. Do not boil strongly.

Stir Gently

  • Stir continuously while heating. This prevents burning and helps flavors combine smoothly.

Adjust Flavor

  • Taste the sauce carefully. Add more honey if you want sweetness. Add soy sauce for saltiness.

Cool the Sauce

  • Turn off heat and let it cool. Sauce will slightly thicken as it rests.

Store or Serve

  • Use immediately or store in a jar. Serve with sushi, rice or grilled food.
