Ingredients
  

  • 1 cup green bell peppers
  • 1 cup red bell peppers
  • 1/2 cup yellow bell peppers
  • 2 jalapeños
  • 1 small onion
  • 2 cloves garlic
  • 1/2 cup white vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions
 

Wash the Vegetables

  • Wash all peppers, onion, and jalapeños under clean water. Dry them well before cutting.

Chop the Peppers

  • Cut all peppers into small pieces. Remove seeds if you want less heat.

Prepare Onion and Garlic

  • Peel onion and garlic. Chop them into small pieces for easy blending.

Blend Lightly

  • Put peppers, onion, and garlic into a food processor. Pulse until finely chopped but not pureed.

Heat the Oil

  • Add olive oil to a saucepan. Heat it on medium flame until warm.

Cook the Mixture

  • Add chopped vegetables into the pan. Stir and cook for five minutes.

Add Seasoning

  • Add vinegar, sugar, salt, and black pepper. Mix everything well.

Simmer Slowly

  • Let the mixture cook for five more minutes. Stir often to avoid burning.

Cool Completely

  • Turn off heat and let the relish cool down fully before storing.
