Ingredients
  

  • 2 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 carrots chopped
  • 3 garlic cloves minced
  • 2 cups beef broth
  • 1 cup tomato sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 bay leaf

Instructions
 

Prepare the Short Ribs

  • Pat the short ribs dry using paper towels. Season them with salt and black pepper. Dry meat browns better and creates deeper flavor during cooking.

Brown the Meat

  • Heat olive oil in a Dutch oven over medium-high heat. Add short ribs and cook until brown on all sides. This step locks in flavor and gives rich color.

Cook the Vegetables

  • Remove the ribs and set aside. Add onion, carrots, and garlic into the same pot. Cook for several minutes until soft and fragrant.

Add the Sauce Ingredients

  • Pour beef broth and tomato sauce into the pot. Add tomato paste, thyme, and bay leaf. Stir well to combine all the flavors together.

Return the Ribs

  • Place the browned short ribs back into the pot. Spoon some sauce over the meat. The ribs should sit mostly covered in liquid for slow cooking.

Slow Cook Until Tender

  • Cover the pot and place it in the oven at 325°F. Cook for about 3 hours. The meat becomes very soft and easy to pull apart.

Serve Warm

  • Remove the bay leaf before serving. Spoon extra sauce over the ribs and serve hot with your favorite side dishes.
