Ingredients
  

  • 1 cup whole wheat berries
  • 1/2 cup barley
  • 1/2 cup lentils
  • 1/4 cup chickpeas
  • 1/4 cup kidney beans
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 packet active dry yeast
  • 1/2 cup warm water

Instructions
 

Soak the Grains and Beans

  • Place wheat, barley, lentils, chickpeas and beans in a bowl. Cover with water. Let them soak overnight. This softens them and makes blending easier later.

Blend the Mixture

  • Drain soaked grains and beans. Add them to a blender. Blend until thick and smooth. It should look like a heavy batter. This step creates the base of the bread.

Activate the Yeast

  • In a small bowl, mix warm water and yeast. Let it sit for 5–10 minutes. It should become foamy. This shows the yeast is active and ready.

Mix the Dough

  • Add yeast mixture to the blended grains. Add honey, oil and salt. Mix well with a spoon. The dough will be sticky and thick. This is normal for this bread.

Let the Dough Rise

  • Cover the bowl with a clean cloth. Let it sit in a warm place for about 1 hour. The dough should rise slightly. This step helps make the bread soft.

Bake the Bread

  • Preheat oven to 180°C. Grease a loaf pan. Pour the dough into the pan. Bake for 40–45 minutes. The top should turn golden brown and firm.

Cool and Slice

  • Remove bread from oven. Let it cool completely before slicing. This helps the bread set properly. Slice into pieces and enjoy fresh or toasted.
