Ingredients
  

  • 1 pound salted cod fish
  • 4 cups water
  • 1 small red onion sliced thin
  • 1 small green bell pepper sliced
  • 1 small red bell pepper sliced
  • 1 tomato chopped
  • 1 cucumber chopped
  • 1/4 cup black olives
  • 2 tablespoons fresh parsley chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon black pepper
  • 1/2 teaspoon oregano

Instructions
 

Soak the Salted Cod

  • Place the salted cod into a large bowl with water. Let it soak overnight in the refrigerator. Change the water several times to remove extra salt and soften the fish properly.

Boil the Cod Fish

  • Drain the soaked cod and place it into a saucepan with fresh water. Boil gently for about 10 minutes until tender. Carefully remove the fish and let it cool slightly before handling.

Flake the Fish

  • Use a fork or clean hands to break the cod into small pieces. Remove any bones or skin carefully. The fish should look soft, flaky, and easy to mix into the salad.

Prepare the Vegetables

  • Slice the onions and peppers into thin strips. Chop the tomatoes and cucumber into bite-sized pieces. Place all fresh vegetables into a large mixing bowl for easy combining later.

Mix the Salad

  • Add the flaked cod fish into the bowl with vegetables. Toss in olives and parsley. Gently mix everything together so the ingredients stay fresh and colorful without becoming mushy.

Add Dressing and Serve

  • Drizzle olive oil and lemon juice over the salad mixture. Sprinkle oregano and black pepper on top. Toss gently until evenly coated. Serve chilled or at room temperature for the best flavor.
